



A cake in a mug you say?! Takes less than 5 minutes to make I hear you cry?! Yes people, a vegan mug cake that takes minutes to make and it’s scrummy yummy.
I don’t know about you, but I have the biggest sweet tooth in the world. I crave chocolate daily. I also love to bake, although, I loath the washing up that comes with it. The other evening I was sat there watching Tiger King on Netflix, all you cool cats and kittens will know what I’m talking about, and in the back of my head, I’m dreaming of chocolate cake. Warm, oozing, chocolate cake, but I can’t start baking now, it’s 8pm. I can’t be whacking out my Mary Berry skills and whipping up a cake at this time. Then I have this genius idea, I’m going to create a mug cake.
I’ve been following a 12-week fitness and vegan meal guide, meaning my usual chocolate craving could not be satisfied with a dairy milk snack bar. So, cool cats here’s my super quick, super simple, super satisfying vegan coco mug cake.
Ingredients;
- 3 tbsp plain flour
- 2 tsp cocoa powder
- 2 tbsp sweetener or sugar
- ¼ tsp baking powder
- 2 tsp veg oil
- 3 tbsp plant milk
- 4 squares of dark chocolate
- Drizzle of vanilla essence
- Drizzle of agave/maple syrup (or honey if you’re not vegan)
Are you ready to see how simple this is?
- Grab all your ingredients
- Mix them all together in a mug, apart from the dark chocolate
- Once all the ingredients are combined, chop up the dark chocolate.
- Mix 2 squares into the batter and sprinkle 2 squares on top of the batter.
- Microwave for 1minute (my microwave is 800w so you might want to start at 30 seconds and then do 10 seconds after that if it’s still not cooked)
Wooooollaaarr, that is my vegan chocolate cake. I told you it was quick and easy! You can serve it in the mug, you can tip it into a bowl and serve with ice cream or you can top it with melted peanut butter. The possibilities are endless.
