Stuffed Onions

Stuffed onions, is that even a thing? Well, it is now! When I was gifted a voucher card for The Meatless Farm, I tootled off to the shops and bought myself the ‘meat free mince’. Hopefully by now you should know that I like to think outside of the box and I like adding twists and turns to my recipes.

This is why I present to you, the stuffed onion! woooo hoooo, yayyy, crowd goes wild.

These stuffed onions are wholesome, comforting and something that will intrigued your guests. I can’t believe people don’t stuff their onions more often?! Ok, another babbling lets get to it…

Ingredients

Half a pack of The Meatless Farm ‘meat free mince’

4 onions

3 Tablespoons of plain yogurt

3 Tablespoons of breadcrumbs

1 tsp coriander

1 tsp mixed spice

1 tsp onion powder

1 tsp parsley

1/2 tsp cinnamon

1 tsp veg stock powder or half stock cube

salt and pepper to taste

Method

  1. Start by cutting your onions on each end to make a flat based and an open top. Don’t worry to much about peeling them, the skin becomes loose as you cook them.
  2. Place them in boiling water for 15 minutes, until they are soft.
  3. Remove the onions from the water and use a teaspoon to scoop out the inside, leaving two or three layer as your case for the mince meat. Don’t throw the insides away, we are going to use this in the stuffinf.
  4. Set the onions aside too cool.
  5. Finley chop your vegetables, the fresh red chilli and your soft onion that you scooped out.
  6. In a frying, heat 1 tablespoon of olive oil and fry your mince meat and vegetables until soft and brown.
  7. Half way trough cooking add your herbs and chilli.
  8. Then before you take the mixture off the heat, mix together 5 tablespoons of hot water and 1 teaspoon of veg boullion or half a veg stock cube and add this to the mince mixture.
  9. Once it’s all combined take it off the heat.
  10. Add 3 tablespoons of yogurt and 3 tablespoons of breadcrumbs and mix until combined.
  11. Add as much salt and pepper as desired.
  12. Spoon the mixture into the onions, making sure you push it to sides of the onion and that the mixture is super compacted.
  13. Place on a baking tray and cook in the oven on 200 for 20-30 minutes.

I served mine with hot veg gravy, on a bed of steamed greens. Scrummy yummy!
