Ooo ladies and gentleman, I have a real treat for you here! NOTE: READ THIS NEXT BIT LIKE THE M&S ADVERT… This is not just a millionaire shortbread, this is a buttery vegan shortbread topped with a gooey nutty centre and drizzled with dark chocolate. Are you salivating yet?
Earlier this week, I was sent the best package a super snacker could wish for. I huge box of The Nutty Groups energy balls. I received the flavours; salted caramel, ginger bread, strawberry swirl, cacao brownie and cacao orange. These energy balls are scrumptious on their own, but I wanted to incorporate them into some recipes of mine, play around a little. In the next few weeks i’ll be sharing my recipes and showing you how you can use them differently.
So, let’s get started with the first flavour salted caramel.

Ingredients
Shortbread Layer:
50g dairy free butter
100g golden caster sugar
100g plain flour
Drizzle of Vanilla Essence
Flaxseed ‘egg’

Gooey Middle Layer:
4 Jars of The Nutty Group Salted Caramel
2 teaspoons of coconut oil
3 teaspoons of golden syrup

Chocolate layer:
200g dark chocolate
Method
First you need to make the shortbread layer;
- First prepare your flaxseed egg, 1 tablespoon of flaxseed and 3 tablespoons of water. Combine and put in the fridge for 15 minutes.
- In the meantime, combine the sugar and the butter together.
- Mix the dry ingredients together and combine with the sugar and butter.
- Then add the vanilla and flaxseed egg.
- Grab yourself a loaf tin, line it with baking paper and spread the dough across the bottom of the tin. Making sure the layer is flat.
- Bake a 190C for 30 minutes.
- Cool before adding the middle layer.

Now onto the gooey middle layer;
- Cut your energy balls into small pieces.
- Melt the coconut oil in a pan, on a low heat.
- Add the energy ball pieces to the pan
- Add the golden syrup.
- Combine all the ingredients until you the mixture forms a soft ball shape, (look to the picture above)
- Spread the gooey layer over the shortbread.
- Put into the fridge for at least half an hour or until the layer is cooled.

This is the easy part;
- Break the chocolate into pieces.
- Melt the chocolate.
- Dizzle over the middle layer.
- Place in the fridge to set.

Once every thing has cooled and set. Grab yourself a knife and cut into 7 nice sized pieces.
If you like millionaire shortbread but want something a little different, then i’ve got you covered! These energy balls worked so well in this recipe and you could definitely changed the flavour, the cacao orange would taste amazing in this recipe!
